Highlands Hollow Brewhouse

“The Hollow,” was given the moniker by local patrons, and has been a North-End favorite for years. Originally opened as the Brass Lamp (“Mother Lamp #2”) by Rod “Toad’ Davidson, & Chas Allan, in 1968, it came full circle three decades later when the building was purchased by Toad from Nat Adams, the original builder, in 1999. The exposed wooden rafters were part of the old BSU stadium, and are now home to one of the most extensive collections of coasters, or ‘grog doilies’ in seven western states. Locals, extreme athletes (and moderates), hikers, skiers, Mtn. bikers, beer enthusiasts – hand crafted, quality beer being their aim – have come from around the world to enjoy our award winning brews and hand fashioned fare.

We seek the finest ingredients for our menu, including fresh baked artisanal breads and non-hormone riddled meats. Our killer soups don’t come from plastic tubs, and our hand cut fries are really hand cut. Payette Brewing

Mike Francis left the corporate life as an industrial engineer for Boeing Company in Seattle to engineer some industry of his own. After receiving an associate's degree in Brewing Technology from Chicago's Siebel Institute of Technology, followed by a stint at Schooner Exact Brewing in Seattle, Mike headed to his home turf of Boise in 2010 to establish Payette Brewing Company. Our brewery currently runs a 15-barrel brewing system and offers four year-round beers: Payette Pale Ale, Outlaw IPA, Mutton Buster Brown Ale and North Fork Lager. In 2012, we made Idaho brewing history when we introduced Payette Pale Ale and Mutton Buster in cans. Be on the lookout for even more choices of canned beer in the future. In the meantime, you can find our beer in bars, restaurants, and retail locations including grocery and specialty stores throughout Idaho.

Cider is the missing link between wine and beer. We brew our cider from apples grown in the Northwest; it is naturally gluten-free, making it essentially guilt-free, right? All our cider is made with real apples with other pure fruit juices added, no artificial flavors or essences. Meriwether cider isn’t sweet enough to give you flashbacks from freshmen year of college, but just sweet enough to transport you to hot summer days or to champagne powder on your favorite slope. We’re brewing up many different kinds of ciders, including semi-sweet, semi-dry, blackberry, cherry, plum, ginger, apple pie, apricot, gin botanical, and hopped.

Bear Island Brewing

Once Upon a time in Cascade, Idaho; the Westover family was enjoying time at their to-be cabin site (aka staying in tents while building the family cabin). Being surrounded by wilderness, the children nervously asked their parents about the possibility of running into a bear. The parents told their children that when Cascade Reservoir freezes over in the winter, all of the bears go out to the island in the middle to hibernate. And when they wake up in the spring, the lake is thawed out and they are stuck out there! Therefore, there is no need to be afraid of the bears because they are all on “Bear Island.” We have affectionately used this name for the island ever since and now have proudly named our brewery after it.

Boise Beer Tours

We offer tours Friday through Sunday.

Monday - Thursday tours are available upon request and group bookings are available at anytime, just email or call us with inquiries.

All tours are slated to start at 6 pm, except for Saturday's, which start at 2 pm.

Please arrive for your tour approx 10-15 minutes early to ensure an on-time departure.

Tour price includes four to five samples at each brewery. All tours also include a Brews Cruise souvenir keepsake for you to take home.
